🥔 Vegan Potato Curry

Ingredients

  • 2 tbsp oil

  • 1 onion, finely chopped

  • 2 tomatoes, blended (or 1 cup canned tomato puree)

  • 3 cloves garlic, minced

  • 1 tsp grated ginger

  • 3–4 potatoes, peeled & cubed

  • 1 tsp cumin seeds

  • 1 tsp turmeric

  • 1 tsp coriander powder

  • 1 tsp chili powder (adjust to taste)

  • 1 tsp garam masala

  • Salt to taste

  • 1½–2 cups water

  • Fresh coriander (cilantro) for garnish

Instructions

  1. Heat oil in a pot. Add cumin seeds and let them crackle.

  2. Add onion and sauté until golden.

  3. Stir in garlic and ginger; cook 30 seconds.

  4. Add tomato puree, turmeric, coriander, chili powder, and salt. Cook until oil separates.

  5. Add potatoes and mix well to coat with masala.

  6. Pour in water, cover, and simmer 20–25 minutes until potatoes are tender.

  7. Sprinkle garam masala, simmer 2 more minutes.

  8. Garnish with fresh coriander and serve hot.
