🍞 Vegan Meatloaf

Ingredients

Loaf

  • 1½ cups cooked lentils (brown or green, well-drained)

  • 1 cup breadcrumbs (or oats for GF option)

  • ½ cup finely chopped onion

  • 2 cloves garlic, minced

  • ½ cup grated carrot

  • ½ cup chopped mushrooms (optional but great)

  • 2 tbsp ground flaxseed + 5 tbsp water (flax egg)

  • 2 tbsp tomato paste

  • 2 tbsp soy sauce or tamari

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • ½ tsp black pepper

  • Salt to taste

Glaze

  • ¼ cup ketchup

  • 1 tbsp maple syrup or brown sugar

  • 1 tsp mustard (optional)

Instructions

  1. Prep flax egg
    Mix flaxseed with water and rest 5 minutes.

  2. Cook veggies
    Sauté onion and garlic in a little oil until soft. Add carrot and mushrooms; cook 3–4 minutes.

  3. Mix
    In a bowl, mash lentils slightly. Add breadcrumbs, veggies, flax egg, tomato paste, soy sauce, and spices. Mix well.

  4. Shape
    Press mixture firmly into a lined loaf pan.

  5. Glaze
    Mix glaze ingredients and spread on top.

  6. Bake
    Bake at 180°C (350°F) for 40–45 minutes.

  7. Rest 10 minutes before slicing (important!).
