🧄 Vegan Garlic Soup
Ingredients

2 tbsp olive oil

1 whole garlic bulb (about 12–15 cloves), peeled

1 onion, chopped

2 tbsp flour (or cornstarch for GF)

4 cups vegetable broth

1 small potato, diced (for creaminess)

½ tsp thyme or rosemary

Salt & black pepper to taste

1 tbsp lemon juice (to finish)
Instructions

Heat olive oil in a pot over medium-low heat.

Add garlic cloves and gently sauté until soft and lightly golden (don’t burn!).

Add onion and cook until translucent.

Stir in flour and cook 1 minute.

Slowly add vegetable broth, stirring to avoid lumps.

Add potato, herbs, salt, and pepper.

Simmer 20–25 minutes until potato and garlic are very soft.

Blend until smooth (or leave slightly chunky if you like).

Stir in lemon juice, taste, and adjust seasoning.
Serving Ideas
