🥬🥟 Vegan Crispy Bottom Veggie Buns
🧺 Ingredients
Dough:

2½ cups all-purpose flour

1 tsp instant yeast

1 tsp sugar

¾ tsp salt

¾ cup warm water

1 tbsp oil
Veggie filling:

1 cup cabbage, finely chopped
-
½ cup carrots, grated
-
½ cup mushrooms, finely chopped
-
2 spring onions, sliced
-
2 cloves garlic, minced
-
1 tsp ginger, grated
-
1 tbsp soy sauce
-
1 tsp sesame oil
-
Black pepper to taste
For crispy bottom:

1½ tbsp oil
-
¼ cup water (for steaming)
👩🍳 Instructions

Make the dough
Mix flour, yeast, sugar, and salt. Add warm water and oil. Knead until soft.
Cover and let rise 1 hour (until doubled). -
Prep filling
Mix all filling ingredients in a bowl. (Optional: lightly sauté for deeper flavor.) -
Shape buns
Divide dough into balls. Roll each into a small circle.
Add filling, pleat, and seal. -
Pan-steam for crisp
Heat oil in a nonstick pan. Arrange buns seam-side up.
Cook until bottoms turn golden. -
Steam
Carefully add water, cover immediately, and steam 6–8 minutes until fluffy. -
Uncover & crisp again
Remove lid and let remaining water evaporate for extra crunch.
