🥬🥟 Vegan Crispy Bottom Veggie Buns

🧺 Ingredients

Dough:

  • 2½ cups all-purpose flour

  • 1 tsp instant yeast

  • 1 tsp sugar

  • ¾ tsp salt

  • ¾ cup warm water

  • 1 tbsp oil

Veggie filling:

  • 1 cup cabbage, finely chopped

  • ½ cup carrots, grated

  • ½ cup mushrooms, finely chopped

  • 2 spring onions, sliced

  • 2 cloves garlic, minced

  • 1 tsp ginger, grated

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • Black pepper to taste

For crispy bottom:

  • 1½ tbsp oil

  • ¼ cup water (for steaming)


👩‍🍳 Instructions

  1. Make the dough
    Mix flour, yeast, sugar, and salt. Add warm water and oil. Knead until soft.
    Cover and let rise 1 hour (until doubled).

  2. Prep filling
    Mix all filling ingredients in a bowl. (Optional: lightly sauté for deeper flavor.)

  3. Shape buns
    Divide dough into balls. Roll each into a small circle.
    Add filling, pleat, and seal.

  4. Pan-steam for crisp
    Heat oil in a nonstick pan. Arrange buns seam-side up.
    Cook until bottoms turn golden.

  5. Steam
    Carefully add water, cover immediately, and steam 6–8 minutes until fluffy.

  6. Uncover & crisp again
    Remove lid and let remaining water evaporate for extra crunch.
