🥐 Vegan Biscuits (Soft & Flaky)

🧺 Ingredients

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 tbsp sugar (optional)

  • ½ cup cold vegan butter or solid coconut oil

  • ¾ cup cold plant milk (soy or almond)

  • 1 tsp apple cider vinegar or lemon juice


👩‍🍳 Instructions

  1. Prep milk
    Mix plant milk with vinegar. Set aside 5 minutes (vegan “buttermilk”).

  2. Dry mix
    Whisk flour, baking powder, salt, and sugar.

  3. Cut in fat
    Rub cold vegan butter into flour until crumbly (pea-sized bits = flaky layers).

  4. Form dough
    Add milk mixture. Stir just until dough comes together—don’t overmix.

  5. Shape & cut
    Pat dough to 1-inch thickness. Fold once or twice for layers. Cut rounds.

  6. Bake
    Place on lined tray. Bake at 220°C (425°F) for 12–15 minutes until golden.

  7. Serve warm
    Brush tops with vegan butter if you’re feeling fancy 😄
