🌶️🥜 Vegan Spicy Thai Peanut Ramen
🧺 Ingredients
Ramen & veg:

2 packs ramen noodles (discard seasoning)

1 tbsp sesame oil

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1–2 tbsp red curry paste (vegan)

1 cup mushrooms, sliced

1 cup bell peppers or carrots, julienned
-
1 cup bok choy or spinach
-
2 cups vegetable broth
Peanut broth:
-
⅓ cup creamy peanut butter
-
1 tbsp soy sauce or tamari
-
1 tbsp sriracha or chili paste (adjust heat 🔥)

1 tbsp lime juice
-
1 tsp maple syrup or brown sugar
Toppings (optional but elite):

Green onions
-
Crushed peanuts
-
Fresh cilantro
-
Chili oil
-
Lime wedges
👩🍳 Instructions

Build the base
Heat sesame oil in a pot. Sauté garlic and ginger until fragrant. Stir in red curry paste and cook 30 seconds. -
Veg time
Add mushrooms and peppers/carrots. Cook 2–3 minutes. -
Broth it up
Pour in vegetable broth and bring to a gentle boil. -
Peanut magic
Whisk peanut butter, soy sauce, sriracha, lime juice, and maple syrup. Stir into the soup until smooth and creamy. -
Cook noodles
Add ramen noodles and bok choy/spinach. Cook 3–4 minutes until noodles are tender. -
Taste & tweak
Balance salty–spicy–sour–sweet as needed. -
Serve hot
