🌶️🥜 Vegan Spicy Thai Peanut Ramen

🧺 Ingredients

Ramen & veg:

  • 2 packs ramen noodles (discard seasoning)

  • 1 tbsp sesame oil

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1–2 tbsp red curry paste (vegan)

  • 1 cup mushrooms, sliced

  • 1 cup bell peppers or carrots, julienned

  • 1 cup bok choy or spinach

  • 2 cups vegetable broth

Peanut broth:

  • ⅓ cup creamy peanut butter

  • 1 tbsp soy sauce or tamari

  • 1 tbsp sriracha or chili paste (adjust heat 🔥)

  • 1 tbsp lime juice

  • 1 tsp maple syrup or brown sugar

Toppings (optional but elite):

  • Green onions

  • Crushed peanuts

  • Fresh cilantro

  • Chili oil

  • Lime wedges


👩‍🍳 Instructions

  1. Build the base
    Heat sesame oil in a pot. Sauté garlic and ginger until fragrant. Stir in red curry paste and cook 30 seconds.

  2. Veg time
    Add mushrooms and peppers/carrots. Cook 2–3 minutes.

  3. Broth it up
    Pour in vegetable broth and bring to a gentle boil.

  4. Peanut magic
    Whisk peanut butter, soy sauce, sriracha, lime juice, and maple syrup. Stir into the soup until smooth and creamy.

  5. Cook noodles
    Add ramen noodles and bok choy/spinach. Cook 3–4 minutes until noodles are tender.

  6. Taste & tweak
    Balance salty–spicy–sour–sweet as needed.

  7. Serve hot
    Load up toppings and slurp happily 😋
