☕🍰 Delicious Vegan Tiramisu

🧺 Ingredients

Cream layer:

  • 1½ cups raw cashews (soaked 4 hours)

  • ¾ cup thick coconut cream (chilled)

  • ⅓ cup maple syrup or powdered sugar

  • 2 tbsp lemon juice

  • 1 tsp vanilla extract

  • 2 tbsp nutritional yeast (optional, adds depth)

Coffee soak:

  • 1½ cups strong brewed coffee or espresso (cooled)

  • 1–2 tbsp coffee liqueur or vanilla extract (optional)

Layers:

  • Vegan ladyfingers or plain vegan sponge cake

  • Unsweetened cocoa powder (for dusting)


👩‍🍳 Instructions

  1. Blend the cream
    Blend cashews, coconut cream, sweetener, lemon juice, vanilla, and nutritional yeast until ultra-smooth and fluffy.

  2. Prepare coffee
    Mix cooled coffee with liqueur or vanilla.

  3. Assemble layers
    Quickly dip cake pieces into coffee (don’t soak too long).
    Layer cake → cream → cake → cream in a dish or cups.

  4. Chill
    Refrigerate at least 4 hours (overnight = best texture).

  5. Finish
    Dust generously with cocoa powder before serving.
