🥔 Vegan Bombay Potatoes (Easy & Spicy)
Ingredients

500 g potatoes (boiled, peeled & cubed)

2 tbsp oil

1 tsp mustard seeds

1 tsp cumin seeds

1 small onion (finely chopped)

2 cloves garlic (minced)

1 tsp ginger paste

½ tsp turmeric
-
1 tsp red chili powder (adjust to taste)

1 tsp ground coriander
-
½ tsp garam masala
-
Salt to taste

2 tbsp water
-
Fresh coriander (cilantro), chopped

Lemon juice (to taste)
Instructions

Heat oil in a pan over medium heat.

Add mustard & cumin seeds; let them splutter.

Add onion, sauté until golden.

Stir in garlic & ginger, cook 30 seconds.

Add turmeric, chili powder, coriander, salt, and water.

Add potatoes, toss gently to coat.
-
Cook 5–7 minutes, stirring lightly, until potatoes are coated and slightly crisp.

Sprinkle garam masala, lemon juice, and fresh coriander.
