🥔 Vegan Potato Sandwich (Easy & Filling)
Ingredients

2 medium potatoes (boiled & mashed)

1 small onion (finely chopped)

1 green chili (optional, finely chopped)

1 tbsp oil

½ tsp cumin seeds

½ tsp turmeric
-
½ tsp red chili powder (optional)

½ tsp garam masala

Salt to taste

1–2 tbsp fresh coriander (cilantro)

Bread slices (white, brown, or whole wheat)

Vegan butter or oil for toasting
Instructions

Heat oil in a pan, add cumin seeds.

Add onion & green chili, sauté until soft.

Add mashed potatoes, spices, and salt. Mix well.

Cook 2–3 minutes, then stir in fresh coriander.

Spread potato filling on bread slices.

Toast with vegan butter or oil until golden and crisp.
