🥔 Vegan Bombay Potatoes (Easy & Spicy)

Ingredients

  • 500 g potatoes (boiled, peeled & cubed)

  • 2 tbsp oil

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1 small onion (finely chopped)

  • 2 cloves garlic (minced)

  • 1 tsp ginger paste

  • ½ tsp turmeric

  • 1 tsp red chili powder (adjust to taste)

  • 1 tsp ground coriander

  • ½ tsp garam masala

  • Salt to taste

  • 2 tbsp water

  • Fresh coriander (cilantro), chopped

  • Lemon juice (to taste)


Instructions

  1. Heat oil in a pan over medium heat.

  2. Add mustard & cumin seeds; let them splutter.

  3. Add onion, sauté until golden.

  4. Stir in garlic & ginger, cook 30 seconds.

  5. Add turmeric, chili powder, coriander, salt, and water.

  6. Add potatoes, toss gently to coat.

  7. Cook 5–7 minutes, stirring lightly, until potatoes are coated and slightly crisp.

  8. Sprinkle garam masala, lemon juice, and fresh coriander.
