Vegan omelette

🌿 Vegan Omelette (Easy & Egg-Free)

Ingredients

  • ½ cup chickpea flour (besan)

  • ½ cup water

  • ¼ tsp turmeric (for color)

  • ¼ tsp black salt (kala namak) (gives eggy flavor – optional but great)

  • Salt & black pepper to taste

  • 1 tbsp oil

Veggie Add-ins (optional)

  • Chopped onion

  • Bell peppers

  • Spinach

  • Mushrooms

  • Tomatoes

  • Green chilies


Instructions

  1. In a bowl, whisk chickpea flour + water until smooth (no lumps).

  2. Add turmeric, black salt, salt, and pepper.

  3. Stir in veggies if using.

  4. Heat oil in a non-stick pan over medium heat.

  5. Pour batter and spread gently like an omelette.

  6. Cook 2–3 minutes until edges set.

  7. Flip carefully and cook 1–2 minutes more.

  8. Serve hot 🔥


Tips

  • Batter should be pourable, not thick—add a little water if needed.

  • Cover pan while cooking for a softer center.

  • Great with toast, chutney, or avocado 🥑
