🌱 Vegan Semolina Pancakes
🧾 Ingredients

1 cup semolina (sooji/rava)

½ cup plant yogurt (or thick plant milk)

½ cup water (adjust for batter)

1 tbsp oil

1 tsp sugar (optional, for lightly sweet)

½ tsp salt

1 tsp baking powder

Optional flavor:

Sweet: vanilla, cardamom

Savory: chopped onion, green chili, cumin, herbs

👩🍳 Instructions

In a bowl, mix semolina, yogurt, water, oil, sugar, and salt.
Rest 10–15 minutes (sooji absorbs liquid). -
Stir in baking powder (and veggies/spices if using).

Heat a non-stick pan, lightly oil it.

Pour a ladle of batter, spread gently.

Cook on medium heat until bubbles form → flip.

Cook other side till golden.
