🌱 Vegan Semolina Pancakes

🧾 Ingredients

  • 1 cup semolina (sooji/rava)

  • ½ cup plant yogurt (or thick plant milk)

  • ½ cup water (adjust for batter)

  • 1 tbsp oil

  • 1 tsp sugar (optional, for lightly sweet)

  • ½ tsp salt

  • 1 tsp baking powder

  • Optional flavor:

    • Sweet: vanilla, cardamom

    • Savory: chopped onion, green chili, cumin, herbs


👩‍🍳 Instructions

  1. In a bowl, mix semolina, yogurt, water, oil, sugar, and salt.
    Rest 10–15 minutes (sooji absorbs liquid).

  2. Stir in baking powder (and veggies/spices if using).

  3. Heat a non-stick pan, lightly oil it.

  4. Pour a ladle of batter, spread gently.

  5. Cook on medium heat until bubbles form → flip.

  6. Cook other side till golden.


🍯 Serving Ideas

  • Sweet: maple syrup, fruit compote, vegan butter

  • Savory: chutney, vegan yogurt dip, ketchup
