🍞 Vegan Cranberry Loaf Recipe
🧾 Ingredients

1¾ cups all-purpose flour

¾ cup sugar (white or brown)

1½ tsp baking powder

½ tsp baking soda

¼ tsp salt

¾ cup plant milk (almond/soy)

⅓ cup oil
-
1 tsp vanilla extract

1 tbsp lemon juice or vinegar
-
1 cup cranberries (fresh or dried)

1 tbsp flour (to coat cranberries)
Optional (highly recommended 😄):

Zest of 1 orange or lemon

½ tsp cinnamon

Preheat oven to 180°C (350°F). Line a loaf pan.

Dry bowl: Whisk flour, sugar, baking powder, baking soda, salt, cinnamon.

Wet bowl: Mix plant milk, oil, vanilla, lemon juice, zest.

Combine wet + dry (don’t overmix).

Toss cranberries with 1 tbsp flour, fold into batter.

Pour into pan and smooth top.

Bake 45–50 minutes (toothpick = clean).

Cool 10 minutes, then transfer to rack.
✨ Optional Glaze
Mix:

½ cup powdered sugar

1–2 tbsp lemon or orange juice
