🍞 Vegan Cranberry Loaf Recipe

🧾 Ingredients

  • 1¾ cups all-purpose flour

  • ¾ cup sugar (white or brown)

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ¾ cup plant milk (almond/soy)

  • ⅓ cup oil

  • 1 tsp vanilla extract

  • 1 tbsp lemon juice or vinegar

  • 1 cup cranberries (fresh or dried)

  • 1 tbsp flour (to coat cranberries)

Optional (highly recommended 😄):

  • Zest of 1 orange or lemon

  • ½ tsp cinnamon


👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F). Line a loaf pan.

  2. Dry bowl: Whisk flour, sugar, baking powder, baking soda, salt, cinnamon.

  3. Wet bowl: Mix plant milk, oil, vanilla, lemon juice, zest.

  4. Combine wet + dry (don’t overmix).

  5. Toss cranberries with 1 tbsp flour, fold into batter.

  6. Pour into pan and smooth top.

  7. Bake 45–50 minutes (toothpick = clean).

  8. Cool 10 minutes, then transfer to rack.


✨ Optional Glaze

Mix:

  • ½ cup powdered sugar

  • 1–2 tbsp lemon or orange juice
    Drizzle over cooled loaf 🍋🍊
