🥣 Vegan Cauliflower Soup

Creamy, cozy, and dairy-free—perfect comfort food

Serves: 4
Time: ~30 minutes


🧺 Ingredients

  • 1 large cauliflower, chopped

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 medium potato, peeled & cubed (for creaminess)

  • 4 cups vegetable broth

  • ½ cup plant milk (optional, for extra creaminess)

  • ½ tsp black pepper

  • ½ tsp salt (to taste)

  • ¼ tsp nutmeg (optional)

  • 2 tbsp nutritional yeast (optional)


🍲 Instructions

  1. Heat oil in a pot. Sauté onion until soft.

  2. Add garlic; cook 30 seconds.

  3. Add cauliflower and potato; stir 1 minute.

  4. Pour in broth, bring to a boil, then simmer 15–20 minutes until very tender.

  5. Blend until smooth (immersion or blender).

  6. Stir in plant milk, salt, pepper, nutmeg, and nutritional yeast.

  7. Simmer 2–3 minutes and adjust seasoning.

  • Roasted flavor: Roast cauliflower at 200°C / 400°F for 25 minutes first.

  • Garlic lover: Roast whole garlic and blend in.

  • Protein boost: Add white beans before blending.

  • Spicy: Add chili oil or cayenne.
