🥣 Vegan Cauliflower Soup

🧺 Ingredients

1 large cauliflower, chopped

1 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced
-
1 medium potato, peeled & cubed (for creaminess)

4 cups vegetable broth

½ cup plant milk (optional, for extra creaminess)

½ tsp black pepper

½ tsp salt (to taste)

¼ tsp nutmeg (optional)

2 tbsp nutritional yeast (optional)
🍲 Instructions

Heat oil in a pot. Sauté onion until soft.

Add garlic; cook 30 seconds.

Add cauliflower and potato; stir 1 minute.

Pour in broth, bring to a boil, then simmer 15–20 minutes until very tender.

Blend until smooth (immersion or blender).

Stir in plant milk, salt, pepper, nutmeg, and nutritional yeast.

Simmer 2–3 minutes and adjust seasoning.
