Air Fryer Bacon Egg Toast Cups are a quick, delicious, and protein-packed breakfast that’s as fun to make as it is to eat. Each cup starts with a slice of bread pressed into a muffin mold, then wrapped in crispy bacon and filled with a fresh egg. Cooked in the air fryer until golden and perfectly set, the result is a crispy, buttery toast base with savory bacon edges and a creamy egg center. These bite-sized breakfast cups are great for busy mornings, brunch gatherings, or meal prepping — offering a satisfying mix of crunch and comfort in every bite. You can also customize them with cheese, herbs, or veggies for extra flavor and flair.

Ingredients

  • 4 slices of sandwich bread (white or whole wheat)

  • 4 slices of bacon

  • 4 large eggs

  • 2 tablespoons butter (softened)

  • Salt and black pepper, to taste

  • Optional toppings: shredded cheese, chopped chives, diced tomatoes, or hot sauce


Instructions

  1. Preheat Air Fryer
    Set your air fryer to 350°F (175°C) and let it preheat for 2–3 minutes.

  2. Prepare the Bread
    Lightly butter one side of each bread slice. Gently press the slices, buttered side down, into the cups of a muffin tin or silicone muffin molds that fit in your air fryer basket. Press to form a cup shape.

  3. Add the Bacon
    Partially cook the bacon slices for 3–4 minutes in the air fryer or microwave until they start to render but are still flexible. Then, wrap each bacon slice around the inside edge of the bread cup.

  4. Add the Egg
    Crack one egg into each cup. Season with salt and pepper. For extra flavor, sprinkle some shredded cheese on top if desired.

  5. Air Fry
    Place the muffin molds or tin in the air fryer basket. Cook at 350°F (175°C) for 8–10 minutes, depending on how runny you like your yolk.

    • Soft yolk: 7–8 minutes

    • Firm yolk: 9–10 minutes

  6. Serve
    Carefully remove the cups from the air fryer and let them cool slightly. Top with fresh herbs, cheese, or a dash of hot sauce before serving.
