Air Fryer Caprese Chicken is a delicious and elegant dish that brings the classic Italian Caprese flavors—juicy tomatoes, creamy mozzarella, and fragrant basil—to your dinner table in a light, healthy way. The air fryer perfectly cooks the chicken breast until tender and juicy, then melts the mozzarella into a golden, bubbly layer while the tomatoes roast to perfection. Drizzled with a tangy balsamic glaze and finished with fresh basil, this dish is both visually stunning and bursting with flavor. It’s a quick and satisfying weeknight meal that tastes like something straight out of a Mediterranean restaurant.

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon Italian seasoning

  • ½ teaspoon garlic powder

  • Salt and pepper, to taste

  • 4 slices fresh mozzarella cheese

  • 1–2 Roma tomatoes, sliced

  • Fresh basil leaves, for garnish

  • Balsamic glaze, for drizzling

Instructions:

  1. Preheat your air fryer to 375°F (190°C).

  2. Pat the chicken breasts dry and rub them with olive oil, Italian seasoning, garlic powder, salt, and pepper.

  3. Place the chicken breasts in the air fryer basket in a single layer. Cook for 10–12 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).

  4. Top each chicken breast with slices of mozzarella and tomato. Return to the air fryer and cook for another 2–3 minutes, just until the cheese is melted and bubbly.

  5. Remove from the air fryer, top with fresh basil leaves, and drizzle with balsamic glaze.

  6. Serve warm with a side salad or roasted vegetables.
