Air Fryer Beef & Barley Soup
Hearty, nourishing, and deeply comforting, this beef and barley soup is packed with tender beef, wholesome barley, and soft vegetables simmered in a rich savory broth. The air fryer helps build flavor by browning the beef and roasting the vegetables before everything slowly cooks together into a thick, satisfying soup.
It’s the kind of meal that tastes like it’s been cooking all day—warm, rustic, and perfect for cozy nights.
Ingredients
For the Soup
- 500 g (1 lb) beef stew meat, cut into bite-sized cubes
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- ½ cup pearl barley (rinsed)
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 5 cups beef broth
Optional Add-Ins
- Mushrooms (adds earthy depth)
- Peas (added at the end)
- Rosemary
- A splash of red wine
- Fresh parsley for garnish
Instructions
1. Prep and Season the Beef
Pat the beef dry with paper towels so it browns properly.
Toss it in a bowl with:
- olive oil
- salt
- black pepper
- paprika
This simple seasoning builds a rich base flavor for the soup.
2. Brown the Beef in the Air Fryer
Preheat the air fryer to 200°C / 400°F for 3–5 minutes.
Place the beef in a single layer in the basket.
Air fry at 200°C / 400°F for 6–8 minutes, shaking halfway through, until the beef is browned on the outside.
This step locks in flavor and creates a deeper, richer broth later.
3. Roast the Vegetables (Optional but Recommended)
Place onion, carrots, and celery in the air fryer basket.
Drizzle lightly with a bit of olive oil.
Cook at 190°C / 375°F for 5–7 minutes until slightly softened and lightly caramelized.
This enhances the soup’s natural sweetness and depth.
4. Assemble the Soup
In an oven-safe or air fryer-safe deep baking dish, combine:
- browned beef
- roasted vegetables
- rinsed barley
- garlic
- tomato paste
- Worcestershire sauce
- thyme
- bay leaf
- beef broth
Stir everything well so the flavors distribute evenly.
The broth should fully cover the ingredients.
5. Air Fry the Soup
Cover the dish tightly with foil.
Place into the air fryer.
Cook at 160°C / 320°F for 45–55 minutes, stirring halfway through.
The soup is ready when:
- beef is tender
- barley is soft and slightly chewy
- broth is thickened and flavorful
If the soup becomes too thick, add a splash of hot broth and continue cooking.
Texture & Flavor
This soup is:
- rich and savory
- hearty and filling
- slightly thick from barley
- packed with tender beef and soft vegetables
