Air Fryer Fried Alligator Recipe

Crispy on the outside, tender inside — this air fryer version uses much less oil than deep frying.

Ingredients

  • 1 lb alligator meat, cut into bite-size pieces
  • 1 cup buttermilk
  • 1–2 tbsp hot sauce

For the Coating

  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (optional)
  • Salt, to taste
  • Black pepper, to taste

Other

  • Cooking spray or oil spray
  • Lemon wedges (optional)
  • Dipping sauce (ranch, remoulade, or spicy mayo)

Instructions

1. Marinate the Alligator

In a bowl, combine:

  • Buttermilk
  • Hot sauce

Add the alligator pieces and coat well.

Cover and refrigerate for:

  • 30 minutes to 2 hours

This helps tenderize the meat.

2. Prepare the Coating

In another bowl, mix:

  • Flour
  • Cornmeal
  • Paprika
  • Garlic powder
  • Onion powder
  • Cayenne
  • Salt
  • Black pepper

3. Coat the Meat

  • Remove alligator pieces from the marinade.
  • Let excess buttermilk drip off.
  • Dredge each piece in the flour mixture until fully coated.

For extra crunch:

  • Dip again in buttermilk and coat a second time.

4. Preheat the Air Fryer

Preheat to:

  • 200°C / 400°F for 3–5 minutes

5. Air Fry

  • Lightly spray the basket with oil.
  • Arrange pieces in a single layer.
  • Spray tops lightly with oil.

Cook at:

  • 200°C / 400°F for 8–10 minutes

Shake or flip halfway through cooking.

Cook until:

  • Golden brown
  • Crispy
  • Internal temperature reaches safe doneness

6. Serve

Serve hot with:

  • Lemon wedges
  • Ranch
  • Cajun remoulade
  • Spicy mayo
