Crispy on the edges, soft and fluffy in the center, these air fryer potato slices are one of the easiest and most delicious side dishes you can make. Thinly sliced potatoes are coated in olive oil, garlic, and herbs, then air fried until beautifully golden and perfectly crisp. They’re lighter than deep-fried potatoes but still packed with flavor and crunch.

Perfect as a quick snack, side dish, or appetizer, these potatoes pair wonderfully with burgers, grilled chicken, steak, or dipping sauces.


Ingredients

  • 4 medium potatoes (Yukon Gold or russet)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano or Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Optional Add-Ins

  • Parmesan cheese
  • Chili flakes
  • Onion powder
  • Cajun seasoning
  • Rosemary or thyme

Instructions

1. Slice the Potatoes

Wash and scrub the potatoes well.

Slice them into thin rounds, about ¼-inch thick. Try to keep the slices even so they cook uniformly.

You can peel the potatoes if preferred, but leaving the skin on adds extra crispiness and flavor.


2. Season the Potatoes

Place the potato slices into a large bowl.

Add:

  • olive oil
  • garlic powder
  • paprika
  • oregano
  • salt
  • black pepper

Toss everything together until all the slices are evenly coated.

The oil helps the potatoes crisp beautifully while the seasonings create a savory, roasted flavor.


3. Preheat the Air Fryer

Preheat the air fryer to 200°C / 400°F for 3–5 minutes.

This helps the potatoes start crisping immediately once they hit the basket.


4. Air Fry the Potato Slices

Arrange the slices in a single layer inside the air fryer basket.

Do not overcrowd the basket, or the potatoes may steam instead of crisp.

Cook at 200°C / 400°F for 12–15 minutes, flipping halfway through cooking.

The potatoes are ready when:

  • the edges are golden brown
  • the centers are tender
  • the surfaces are crispy

For extra crunch, cook 1–2 minutes longer.
