Honeycrisp Apple Salad
Ingredients
Salad base
- 2 Honeycrisp apples, thinly sliced
- 2 cups mixed greens (or baby spinach)
- 1/2 cup celery, thinly sliced
- 1/3 cup dried cranberries (optional)
- 1/3 cup chopped walnuts or pecans
- 1/4 cup feta or goat cheese (optional)
Dressing
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt & black pepper to taste
Instructions
- Prep apples
Slice Honeycrisp apples thinly. Toss with a little lemon juice if you want to prevent browning. - Build the salad
In a large bowl, combine greens, apples, celery, cranberries, nuts, and cheese. - Make dressing
Whisk olive oil, honey, apple cider vinegar, Dijon mustard, salt, and pepper until smooth. - Toss & serve
Drizzle dressing over salad and toss gently right before serving.
