Honeycrisp Apple Salad

Ingredients

Salad base

  • 2 Honeycrisp apples, thinly sliced
  • 2 cups mixed greens (or baby spinach)
  • 1/2 cup celery, thinly sliced
  • 1/3 cup dried cranberries (optional)
  • 1/3 cup chopped walnuts or pecans
  • 1/4 cup feta or goat cheese (optional)

Dressing

  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt & black pepper to taste

Instructions

  1. Prep apples
    Slice Honeycrisp apples thinly. Toss with a little lemon juice if you want to prevent browning.
  2. Build the salad
    In a large bowl, combine greens, apples, celery, cranberries, nuts, and cheese.
  3. Make dressing
    Whisk olive oil, honey, apple cider vinegar, Dijon mustard, salt, and pepper until smooth.
  4. Toss & serve
    Drizzle dressing over salad and toss gently right before serving.
