Big Mac Smash Tacos (Lightened-Up)

 Ingredients (Makes 4 tacos)

For the tacos:

  • 12 oz 93–99% lean ground turkey or extra-lean ground beef

  • 4 small low-carb/high-fiber tortillas (street-size)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt & pepper to taste

For the “Special Sauce”:

  • ½ cup nonfat plain Greek yogurt

  • 1 tbsp light mayonnaise

  • 1 tbsp ketchup (no sugar added if preferred)

  • 1 tsp yellow mustard

  • 1–2 tbsp finely diced pickles

  • 1 tsp pickle juice

  • ½ tsp smoked paprika

  • Pinch of garlic powder

Toppings:

  • 1 cup shredded iceberg lettuce

  • ¼ cup finely diced white onion

  • ¼ cup diced dill pickles

  • ½ cup reduced-fat shredded cheddar (optional)


 Instructions

 Make the Sauce

In a small bowl, mix:

  • Greek yogurt

  • Light mayo

  • Ketchup

  • Mustard

  • Pickles + pickle juice

  • Spices

Refrigerate while cooking (flavor gets better as it sits).


 Prep the Meat

  • Divide ground meat into 4 equal portions.

  • Press each portion into a very thin layer directly onto one side of each tortilla (raw side).

  • Season the meat side with garlic powder, onion powder, salt, and pepper.


 Cook the Smash Tacos

  • Heat a large skillet over medium heat (lightly spray with cooking spray).

  • Place tortilla meat-side down into the pan.

  • Press firmly with a spatula.

  • Cook 3–4 minutes until browned and crispy.

  • Flip and cook the tortilla side for 1–2 minutes until lightly crisp.


 Assemble

Top each taco with:

  • Shredded lettuce

  • Diced onion

  • Pickles

  • Reduced-fat cheese (optional)

  • Drizzle of special sauce

Fold like a taco and enjoy!

  • Use 99% lean turkey to lower Points.

  • Skip or reduce cheese to save Points.

  • Load up on lettuce and pickles (very low Points).

  • Make it a bowl (no tortilla) for an even lower-Point version.
