Ingredients

  • 1 lb 99% fat-free ground turkey (or lean ground chicken)

  • 1 bag (14–16 oz) coleslaw mix (shredded cabbage and carrots)

  • 3 green onions, sliced

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)

  • 3 tablespoons low-sodium soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1 teaspoon olive oil (for cooking spray or light drizzle)

  • Optional: red pepper flakes, sriracha, sesame seeds


Instructions

  1. Cook the Meat
    Heat a large skillet over medium-high heat. Lightly coat with olive oil or cooking spray. Add ground turkey and cook until browned, breaking it apart as it cooks (about 5–7 minutes). Drain excess liquid if needed.

  2. Add Aromatics
    Stir in garlic and ginger. Cook for 30–60 seconds until fragrant.

  3. Add Cabbage Mix
    Add the entire bag of coleslaw mix. Stir well and cook for 5–7 minutes, until cabbage softens but still has slight crunch.

  4. Season
    Stir in soy sauce, rice vinegar, and sesame oil. Mix thoroughly and cook another 2–3 minutes so flavors combine.

  5. Finish
    Remove from heat. Stir in sliced green onions. Taste and adjust seasoning (extra soy sauce or spice if desired).

  6. Serve
    Serve hot in bowls. Top with sesame seeds or a drizzle of sriracha if desired.


Optional Add-Ins (Adjust Points Accordingly)

  • Scrambled egg mixed in at the end

  • Water chestnuts for crunch

  • Extra shredded carrots

  • Cauliflower rice to stretch servings
