🍮 Keto Caramel Bottom French Toast Bake

Ingredients

Caramel Layer

  • ½ cup keto brown sweetener (allulose or erythritol–allulose blend works best)

  • 4 tbsp butter

  • ¼ cup heavy cream

  • 1 tsp vanilla extract

French Toast

  • 6–8 slices keto bread, cubed

  • 4 large eggs

  • ¾ cup heavy cream

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • Pinch of salt

Optional

  • Chopped pecans or walnuts

  • Sugar-free whipped cream


Instructions

  1. Make caramel

    • Melt butter over low heat.

    • Add sweetener and heavy cream.

    • Stir until smooth and glossy.

    • Remove from heat and mix in vanilla.

  2. Prepare dish

    • Grease a baking dish.

    • Pour caramel evenly into the bottom.

    • Sprinkle nuts over caramel if using.

  3. Add bread

    • Arrange keto bread cubes evenly over caramel.

  4. Custard

    • Whisk eggs, cream, vanilla, cinnamon, and salt.

    • Pour over bread, pressing gently to soak.

  5. Bake

    • Preheat oven to 180°C (350°F).

    • Bake uncovered for 30–35 minutes, until set and golden.

  6. Serve

    • Rest 10 minutes.

    • Invert onto a plate so caramel is on top.
