🍮 Keto Caramel-Bottom French Toast Bake

Ingredients

Caramel Bottom

  • ½ cup keto brown sugar sweetener (erythritol/allulose blend works best)

  • 4 tbsp butter

  • ¼ cup heavy cream

  • 1 tsp vanilla extract

French Toast

  • 6–8 slices keto bread, cubed

  • 4 large eggs

  • ¾ cup heavy cream

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • Pinch of salt

Optional Toppings

  • Chopped pecans or walnuts

  • Sugar-free whipped cream

  • Extra keto caramel drizzle


Instructions

  1. Make the caramel
    In a saucepan over low heat, melt butter.
    Add sweetener and cream, stirring until smooth and glossy.
    Remove from heat, stir in vanilla.

  2. Prepare the bake
    Pour caramel evenly into a greased baking dish.
    Sprinkle nuts over caramel if using.

  3. Add bread
    Layer keto bread cubes evenly over the caramel.

  4. Custard mix
    Whisk eggs, cream, vanilla, cinnamon, and salt.
    Pour over bread, pressing gently so it absorbs.

  5. Bake
    Preheat oven to 180°C (350°F).
    Bake uncovered 30–35 minutes until set and golden.

  6. Serve
    Let rest 10 minutes, then invert onto a plate so the caramel is on top 😍
