Cheesy Garlic Turkey Meatloaf

This turkey meatloaf stays juicy from cheese and garlic while keeping carbs low and protein high. It works well for meal prep and reheats nicely.

Ingredients
For the Meatloaf
- 1½ lb (680 g) lean ground turkey
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1/3 cup grated parmesan cheese
- 3–4 garlic cloves, minced
- 1/4 cup onion, finely diced
- 1/2 cup almond flour
(low-carb substitute for breadcrumbs) - 2 tbsp plain Greek yogurt
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 1 tbsp chopped parsley
Optional Topping
- 1/2 cup shredded mozzarella
- 1 tbsp parmesan
- Fresh parsley
Instructions
1. Preheat Oven
Preheat oven to:
- 375°F (190°C)
Line a loaf pan with parchment paper or lightly grease it.
2. Sauté Garlic & Onion
Heat olive oil in a small pan over medium heat.
Cook:
- onion for 3–4 minutes
- garlic for 30 seconds
Until soft and fragrant.
Let cool slightly.
3. Mix the Meatloaf
In a large bowl combine:
- ground turkey
- eggs
- mozzarella
- parmesan
- almond flour
- Greek yogurt
- cooked onion/garlic
- seasonings
- parsley
Mix gently until combined.
Do not overmix or the meatloaf can become dense.
4. Shape
Transfer mixture into loaf pan or shape into a loaf on a baking tray.
Smooth the top with a spoon.
5. Bake
Bake uncovered for:
- 40–45 minutes
Then add optional cheese topping.
Bake another:
- 5–10 minutes
Until:
- internal temperature reaches 165°F (74°C)
- cheese is melted and golden
6. Rest Before Slicing
Let rest for:
- 8–10 minutes
This helps it hold together and stay juicy.
