Mediterranean Honey–Lime Glazed White Fish
A light, bright, and flavorful Mediterranean-style fish dish with a sweet citrus glaze, garlic, herbs, and olive oil. This recipe works especially well with cod, haddock, tilapia, sea bass, or halibut.

Ingredients
For the Fish
- 4 white fish fillets (about 5–6 oz each)
- 1 tbsp olive oil
- Salt and black pepper to taste
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp oregano
Honey–Lime Glaze
- 2 tbsp honey
- Juice of 2 limes
- 1 tsp lime zest
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1/2 tsp chili flakes (optional)
- 1 tbsp chopped parsley or cilantro
Mediterranean Topping
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup red onion, finely sliced
- 2 tbsp olives, sliced
- 2 tbsp crumbled feta cheese (optional)
- Fresh parsley
Instructions
1. Prepare the Fish
Pat fish dry using paper towels.
Season both sides with:
- salt
- pepper
- paprika
- cumin
- oregano
Drizzle lightly with olive oil.
2. Make the Honey–Lime Glaze
In a small bowl whisk together:
- honey
- lime juice
- lime zest
- garlic
- olive oil
- chili flakes
The glaze should taste balanced between sweet, tangy, and savory.
3. Cook the Fish
Pan-Seared Method
Heat a large skillet over medium heat.
Add a little olive oil.
Cook fish:
- 3–4 minutes per side
During the last 2 minutes:
- pour in the glaze
- spoon glaze over fish repeatedly
Cook until fish flakes easily.
4. Prepare Mediterranean Topping
Combine in a bowl:
- tomatoes
- cucumber
- red onion
- olives
- parsley
Add a small squeeze of lime juice and pinch of salt.
5. Assemble
Place fish on serving plates.
Top with:
- Mediterranean salad mixture
- feta cheese
- extra herbs
Spoon remaining glaze from the pan over everything.
Oven-Baked Option
Bake fish at:
- 400°F (200°C)
For:
- 12–15 minutes
Brush glaze over fish halfway through baking.
