Chicken Pepper Jack Taquitos

Ingredients:
3 cups cooked chicken (shredded or chopped)
8 oz cream cheese, softened
1½ cups shredded pepper jack cheese
½ cup salsa (your choice of mild, medium, or spicy)
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
2 tbsp lime juice
20 tortillas (corn or flour, depending on preference)

Instructions:
Prepare the Chicken Mixture:
In a large mixing bowl, combine the softened cream cheese, cumin, garlic powder, onion powder, chili powder, lime juice, salsa, shredded chicken, and pepper jack cheese. Stir until everything is well combined and the mixture is smooth.
Assemble the Taquitos:
Take one tortilla at a time, and spoon about 2 tablespoons of the chicken mixture into the center (adjust depending on the size of the tortillas). Roll the tortilla tightly around the filling to form a taquito. Repeat for all 20 tortillas.
Cook Immediately or Freeze:
To bake immediately: Preheat the oven to 425°F (220°C). Arrange the rolled taquitos on a baking sheet lined with parchment paper. Bake for 10-15 minutes or until the taquitos are golden and crispy.
To freeze for later: Lay the taquitos on a baking sheet in a single layer and freeze until firm (about 1-2 hours). Then, transfer them to a ziplock bag or airtight container. When you’re ready to eat, bake from frozen at 425°F (220°C) for 17-22 minutes or until crispy and heated through.

Serve:
Serve hot with your favorite dipping sauce, such as guacamole, sour cream, or salsa.

Additional Notes:
Substitutions: You can swap the pepper jack cheese for cheddar or Monterey Jack for a milder flavor.
For a healthier twist: Use whole wheat or low-carb tortillas.
