Keto Chicken, Zucchini & Fresh Corn Burgers

🧾 Ingredients (4–6 burgers)

  • 500 g ground chicken

  • 1 medium zucchini, grated & well squeezed dry

  • 2–3 tbsp fresh corn kernels (optional – keep small for keto)

  • 1 egg

  • ½ cup almond flour (or crushed pork rinds for extra keto)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp paprika or chili powder

  • Salt & black pepper to taste

  • 2 tbsp chopped fresh herbs (parsley or coriander)

  • 2 tbsp olive oil or butter (for frying)


👩‍🍳 Instructions

  1. Prep zucchini: Grate and squeeze out as much liquid as possible.

  2. Mix: In a bowl, combine chicken, zucchini, corn, egg, almond flour, spices, herbs, salt & pepper.

  3. Shape: Form into burger patties.

  4. Cook:

    • Heat oil in a pan over medium heat

    • Cook burgers 4–5 minutes per side until golden and cooked through

    • Or bake at 200°C (400°F) for 18–20 minutes, flipping once

  5. Rest: Let sit 2 minutes before serving.
