Keto Flourless Cottage Cheese Pancakes

🧾 Ingredients (1–2 servings)

  • ½ cup full-fat cottage cheese

  • 2 large eggs

  • 1 tbsp almond flour or coconut flour (optional but helps texture)

  • ½ tsp baking powder

  • ½ tsp vanilla extract (optional)

  • Sweetener to taste (erythritol or monk fruit)

  • Pinch of salt

  • Butter or coconut oil for cooking


👩‍🍳 Instructions

  1. Blend: Add cottage cheese, eggs, sweetener, vanilla, and salt to a blender. Blend until smooth.

  2. Thicken: Stir in baking powder and almond/coconut flour (if using). Rest 2 minutes.

  3. Cook:

    • Heat a non-stick pan on low-medium

    • Add butter/oil

    • Pour small pancake rounds (they flip easier when small)

  4. Flip carefully: Cook 2–3 minutes until bubbles form, then flip and cook 1–2 more minutes.

  5. Serve warm.
