Keto Flourless Cottage Cheese Pancakes
🧾 Ingredients (1–2 servings)

1 tbsp almond flour or coconut flour (optional but helps texture)

½ tsp vanilla extract (optional)

Sweetener to taste (erythritol or monk fruit)

Butter or coconut oil for cooking

Blend: Add cottage cheese, eggs, sweetener, vanilla, and salt to a blender. Blend until smooth.

Thicken: Stir in baking powder and almond/coconut flour (if using). Rest 2 minutes.
