Beets → Roasted radishes (shockingly beet-like once roasted!)
🥣 Ingredients (Serves 2–3)
Salad

1 cup lupini beans, rinsed & skins removed

1½ cups radishes, halved
-
2 tbsp olive oil
-
Salt & pepper
-
½ cup feta cheese, crumbled
-
2 tbsp chopped parsley or dill
-
Optional: sliced olives or cucumber
Lemon-Garlic Vinaigrette

3 tbsp olive oil
-
1½ tbsp fresh lemon juice
-
1 small garlic clove, finely minced
-
½ tsp Dijon mustard
-
Salt & black pepper to taste

Roast the “Beets”
-
Toss radishes with olive oil, salt & pepper

Roast at 200°C / 400°F for 25–30 min until soft & lightly caramelized

Cool slightly

Make the Vinaigrette

Whisk all dressing ingredients until smooth

Assemble the Salad

In a bowl, combine lupini beans + roasted radishes

Drizzle with vinaigrette and toss gently

Top with feta, herbs, and optional olives
