🥗 Keto “Chickpea, Beet & Feta” Salad

(Low-Carb, Mediterranean-Style)

🔁 Keto Swaps

  • Chickpeas → Lupini beans (very low-carb, high protein)

  • Beets → Roasted radishes (shockingly beet-like once roasted!)


🥣 Ingredients (Serves 2–3)

Salad

  • 1 cup lupini beans, rinsed & skins removed

  • 1½ cups radishes, halved

  • 2 tbsp olive oil

  • Salt & pepper

  • ½ cup feta cheese, crumbled

  • 2 tbsp chopped parsley or dill

  • Optional: sliced olives or cucumber

Lemon-Garlic Vinaigrette

  • 3 tbsp olive oil

  • 1½ tbsp fresh lemon juice

  • 1 small garlic clove, finely minced

  • ½ tsp Dijon mustard

  • Salt & black pepper to taste


👩‍🍳 Instructions

  1. Roast the “Beets”

    • Toss radishes with olive oil, salt & pepper

    • Roast at 200°C / 400°F for 25–30 min until soft & lightly caramelized

    • Cool slightly

  2. Make the Vinaigrette

    • Whisk all dressing ingredients until smooth

  3. Assemble the Salad

    • In a bowl, combine lupini beans + roasted radishes

    • Drizzle with vinaigrette and toss gently

    • Top with feta, herbs, and optional olives
