Keto Crepe Rolls (Low-Carb & Gluten-Free)

🥣 Ingredients (Crepes)

  • 3 large eggs

  • 3 tbsp cream cheese (softened)

  • 1/4 cup heavy cream (or almond milk for lighter)

  • 1 tbsp melted butter

  • 1/4 tsp salt

  • Optional (sweet): 1–2 tsp powdered erythritol + a pinch of vanilla

  • Optional (savory): pinch of garlic powder or herbs

👩‍🍳 Instructions

  1. Add all ingredients to a blender. Blend until smooth (no lumps).

  2. Heat a non-stick pan on low–medium heat and lightly grease.

  3. Pour a small amount of batter, swirl to form a thin crepe.

  4. Cook ~30–45 seconds per side (they cook fast).

  5. Stack and cool slightly before filling (prevents tearing).
