To make this quiche, you’ll need simple, wholesome ingredients: olive oil or butter, onion, garlic, fresh or frozen spinach, full-fat cottage cheese, eggs, heavy cream, shredded cheddar, and a few spices like salt, pepper, nutmeg, and optional herbs. This combination ensures a rich, creamy texture while keeping the carb count very low. Using full-fat dairy helps maintain ketosis and adds flavor, while the spinach contributes important micronutrients without impacting the carb content.

 

Ingredients (6 servings)

  • 1 tablespoon olive oil or butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 4 cups fresh spinach (or 10 oz frozen, thawed and drained)

  • 1 cup full-fat cottage cheese

  • 4 large eggs

  • ¼ cup heavy cream (or unsweetened almond milk for fewer carbs)

  • ½ cup shredded sharp cheddar cheese

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon nutmeg (optional)

  • ½ teaspoon dried herbs (thyme, parsley, or basil, optional)


Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) and grease a 9-inch pie dish.

  2. Cook Spinach & Onion:

    • Heat olive oil in a skillet over medium heat.

    • SautĂ© the onion until translucent (3–4 minutes), then add garlic and cook 30 seconds.

    • Add spinach and cook until wilted or fully heated if frozen. Remove from heat.

  3. Prepare Egg Mixture:

    • In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg.

    • Stir in cottage cheese and shredded cheddar cheese.

  4. Combine & Pour:

    • Fold the cooked spinach mixture into the egg and cheese mixture.
