  • 1 tbsp butter or olive oil

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • pinch nutmeg (optional)

  • cooked bacon bits
  • mushrooms
  • feta cheese
  • cheddar cheese
  • chopped jalapeños

Equipment

  • 9-inch pie dish or baking dish
  • skillet
  • mixing bowl

Instructions

Step 1: Preheat Oven

Preheat oven to:

  • 375°F (190°C)

Grease a pie dish or baking dish lightly with butter or oil.

Step 2: Cook the Vegetables

  1. Heat butter or olive oil in a skillet over medium heat.
  2. Add onions and cook:
    • 3–4 minutes

Until softened.

  1. Add garlic and cook:
    • 30 seconds
  2. Add spinach and cook until wilted:
    • about 2 minutes
  3. Remove from heat and let cool slightly.

Step 3: Prepare the Egg Mixture

In a large bowl whisk together:

  • eggs
  • cottage cheese
  • mozzarella
  • parmesan

Add:

  • salt
  • pepper
  • paprika
  • Italian seasoning
  • nutmeg

Mix until combined.

Step 4: Combine

Fold the spinach mixture into the egg mixture.

If using extra add-ins like bacon or mushrooms, stir them in now.

Step 5: Bake

  1. Pour mixture into prepared dish.
  2. Smooth the top.

Bake:

  • 35–45 minutes

Until:

  • center is set
  • top is golden
  • knife inserted comes out mostly clean

Step 6: Rest

Let quiche rest:

  • 10–15 minutes

Before slicing.

This helps it firm up and improves texture.

  • Blending the cottage cheese makes the quiche smoother.
  • Keeping it unblended gives small creamy cheese pockets.
  • Avoid overbaking or it may become rubbery.
