Cowboy Cookies (Air Fryer)
đź›’ Ingredients
- ½ cup butter (softened)
- ½ cup brown sugar
- ÂĽ cup white sugar
- 1 egg
- 1 tsp vanilla extract
- Âľ cup all-purpose flour
- ½ tsp baking soda
- ½ tsp cinnamon
- Pinch of salt
- 1 cup rolled oats
- ½ cup chocolate chips
- ÂĽ cup chopped walnuts or pecans
- ÂĽ cup shredded coconut (optional but classic)
👨‍🍳 Instructions
1. Make the dough
- Cream butter and both sugars until smooth.
- Add egg and vanilla, mix well.
- In another bowl, whisk flour, baking soda, cinnamon, and salt.
- Combine wet + dry ingredients.
- Fold in oats, chocolate chips, nuts, and coconut.
2. Chill (important!)
- Chill dough for 20–30 minutes so cookies don’t spread too much in the air fryer.
3. Preheat air fryer
- Set to 160–170°C (320–340°F).
4. Shape & place
- Scoop small balls (about 1–1.5 tbsp each).
- Flatten slightly.
- Place on parchment paper or a lined air fryer tray (leave space—they spread).
5. Air fry
- Cook for 6–8 minutes.
- Edges should be golden; centers will look slightly soft (they firm up after cooling).
6. Cool
- Let them rest for 5 minutes before moving—they’re delicate when hot.
🔥 Tips that actually matter
- Don’t overcrowd—bake in batches (usually 3–4 cookies at a time).
- If bottoms brown too fast, double-layer parchment or reduce temp slightly.
- For extra chewiness, underbake by ~1 minute.
- For crispier cookies, cook 1–2 minutes longer.
🍯 Optional upgrades
- Add a pinch of espresso powder to boost chocolate flavor
- Swap half the chocolate chips for dark chocolate chunks
- Sprinkle sea salt on top right after cooking
