  • 3–4 firm green tomatoes, sliced ¼-inch thick
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • ½ cup breadcrumbs (optional, for extra crunch)
  • 2 eggs
  • ½ cup milk or buttermilk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

Instructions

  1. Prep the tomatoes
Slice and lightly sprinkle with salt. Let sit 10 minutes, then pat dry.

    • Bowl 2: eggs + milk (whisked)
    • Bowl 3: cornmeal + breadcrumbs + seasonings
  3. Coat the slices
Dip each slice in flour → egg mixture → cornmeal mixture. Press gently so coating sticks.
  4. Fry
Heat about ½ inch of oil in a skillet over medium heat.
Fry slices 2–3 minutes per side until golden brown.
  5. Drain & serve
Place on paper towels. Serve hot.
