High-Protein Blueberry Yogurt Bark

A cold, high-protein snack that works well for meal prep, post-workout snacks, or a lighter dessert.

Ingredients (6–8 servings)

  • 2 cups plain Greek yogurt (2% or full-fat for creamier texture)
  • 1 scoop vanilla protein powder (about 25–30g protein)
  • 2–3 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 2 tbsp chopped almonds or pistachios
  • 1 tbsp chia seeds
  • Optional:
    • Dark chocolate chips
    • Unsweetened coconut flakes
    • Lemon zest

Equipment

  • Baking tray, plate, or cutting board that fits in your freezer
  • Parchment paper
  • Spatula

Instructions

1. Prepare the yogurt mixture

In a mixing bowl, combine:

  • Greek yogurt
  • Protein powder
  • Honey/maple syrup
  • Vanilla extract

Whisk until smooth and fully combined.
If the mixture becomes too thick from the protein powder, add 1–2 tbsp milk.

2. Line the tray

Place parchment paper on your tray or plate.

Spread the yogurt mixture into a rectangle about:

  • ¼ to ½ inch thick

Thinner bark freezes faster and breaks more cleanly.

3. Add toppings

Scatter evenly over the surface:

  • Blueberries
  • Nuts
  • Chia seeds

Optional additions:

  • Dark chocolate chips
  • Coconut flakes
  • Lemon zest

Gently press toppings into the yogurt so they stick after freezing.

4. Freeze

Freeze for:

  • 3–4 hours minimum
  • Overnight for best texture

The bark should be completely firm.

5. Break into pieces

Remove from freezer and let sit 1–2 minutes.

Break or cut into irregular bark pieces.

Tips

  • Use thick Greek yogurt to avoid icy texture.
  • Frozen blueberries also work, but pat them dry first.
  • For extra protein, mix in:

    • extra half scoop protein powder
  • Store in an airtight container in the freezer for up to 2 weeks.

Chocolate Blueberry

Add:

  • 2 tbsp natural peanut butter into the yogurt
