Homemade Protein Brownie Bombs

Dense, fudgy, high-protein bites that taste like brownie truffles. No baking required unless you want a firmer baked version.

About 12–14 brownie bombs

Ingredients

Base

  • 1 cup rolled oats
  • ¾ cup chocolate protein powder
  • ¼ cup unsweetened cocoa powder
  • ¼ tsp salt

Wet Ingredients

  • ½ cup natural peanut butter or almond butter
  • ⅓ cup honey or maple syrup
  • 1 tsp vanilla extract
  • 2–4 tbsp milk (as needed)

Mix-Ins

  • ¼ cup dark chocolate chips
  • Optional:
    • chopped walnuts
    • shredded coconut
    • mini chocolate chunks

Optional Coating

  • Melted dark chocolate
  • Cocoa powder
  • Crushed nuts

Instructions

1. Blend the dry ingredients

Add to a food processor:

  • rolled oats
  • protein powder
  • cocoa powder
  • salt

Pulse until oats become a fine flour-like texture.

If you don’t have a processor, use oat flour instead of rolled oats.


2. Add wet ingredients

Add:

  • peanut butter
  • honey/maple syrup
  • vanilla extract

Blend until the mixture starts clumping together.

If dry or crumbly:

  • add milk 1 tbsp at a time

The texture should feel like soft brownie dough.


3. Fold in mix-ins

Stir in:

  • chocolate chips
  • optional nuts or coconut

4. Shape the brownie bombs

Scoop about:

  • 1 to 1½ tbsp mixture per ball

Roll tightly using your hands.

If sticky:

  • lightly wet your hands
    or
  • chill dough 10 minutes first.

5. Optional coating

Chocolate shell

Dip balls into melted dark chocolate and place on parchment paper.

Cocoa coating

Roll in cocoa powder for a truffle-style finish.

Nut coating

Roll in crushed almonds, peanuts, or pistachios.


6. Chill

Refrigerate:

  • 20–30 minutes

Or freeze:

  • 10–15 minutes

This firms them up and improves texture.

Add:

  • 1 tsp instant espresso powder

Cookies & Cream

Use:

  • vanilla protein powder
  • crushed chocolate sandwich cookies

Mint Chocolate

Add:

  • ¼ tsp peppermint extract

Peanut Butter Cup Style

Place a small peanut butter center inside each ball.
