  • 1 kg (2โ€“2.2 lb) chicken wings, split & tips removed

  • 1ยฝ tsp baking powder (aluminum-free)

  • 1 tsp salt

  • 1ยฝ tsp coarse black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika (optional)

Lemon-Pepper Butter (optional but amazing):

  • 3 tbsp butter, melted

  • Zest of 1 lemon

  • 1โ€“2 tbsp fresh lemon juice (to taste)

  • Extra black pepper

๐Ÿ”ฅ Oven Method (Extra Crispy)

  1. Dry wings well with paper towels (very important).

  2. Toss wings with baking powder, salt, pepper, and all spices.

  3. Place on a wire rack over a baking tray.

  4. Bake at 220ยฐC / 425ยฐF for 40โ€“45 minutes, flipping halfway, until deeply golden and crispy.

  • Cook at 200ยฐC / 400ยฐF for 18โ€“22 minutes, shaking halfway.

  1. Mix melted butter, lemon zest, lemon juice, and extra pepper.

  2. Toss hot wings in the sauce or drizzle lightly for maximum crisp.
