🌱 Vegan Homemade Spaghetti Salad

🧺 Ingredients

For the salad:

  • 250 g spaghetti (regular or whole wheat)

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • ½ cup bell peppers (red/yellow), chopped

  • ¼ cup red onion, thinly sliced

  • ½ cup olives, sliced

  • ½ cup sweet corn (optional)

  • 2 tbsp fresh parsley or basil, chopped

For the dressing:

  • ¼ cup olive oil

  • 3 tbsp lemon juice or apple cider vinegar

  • 1–2 tbsp maple syrup or sugar (to taste)

  • 1 tsp Dijon mustard

  • 1 tsp garlic powder (or 1 fresh clove, minced)

  • Salt & black pepper to taste

  • ½ tsp dried oregano or Italian seasoning


👩‍🍳 Instructions

  1. Cook spaghetti in salted water until al dente. Drain and rinse with cold water to cool completely.

  2. Prepare veggies and add them to a large mixing bowl.

  3. Whisk dressing ingredients until smooth and well combined.

  4. Combine everything: add spaghetti to veggies, pour dressing over, and toss gently.

  5. Chill for at least 30 minutes so flavors soak in.

  6. Taste, adjust seasoning, and serve cold.
