🌱 Vegan Homemade Spaghetti Salad
🧺 Ingredients
For the salad:

250 g spaghetti (regular or whole wheat)

1 cup cherry tomatoes, halved

1 cup cucumber, diced
-
½ cup bell peppers (red/yellow), chopped

¼ cup red onion, thinly sliced

½ cup olives, sliced
-
½ cup sweet corn (optional)

2 tbsp fresh parsley or basil, chopped
For the dressing:

¼ cup olive oil
-
3 tbsp lemon juice or apple cider vinegar
-
1–2 tbsp maple syrup or sugar (to taste)

1 tsp Dijon mustard
-
1 tsp garlic powder (or 1 fresh clove, minced)

Salt & black pepper to taste

½ tsp dried oregano or Italian seasoning
👩🍳 Instructions

Cook spaghetti in salted water until al dente. Drain and rinse with cold water to cool completely.

Prepare veggies and add them to a large mixing bowl.

Whisk dressing ingredients until smooth and well combined.

Combine everything: add spaghetti to veggies, pour dressing over, and toss gently.

Chill for at least 30 minutes so flavors soak in.

Taste, adjust seasoning, and serve cold.
