🌭 Homemade Vegan Sausage

Plant-Based • High-Protein • Meal-Prep Friendly

🥣 Ingredients (Makes 8–10 sausages)

  • 1½ cups cooked lentils (well-drained)

  • 1 cup vital wheat gluten

  • ¼ cup nutritional yeast

  • 2 tbsp soy sauce or tamari

  • 2 tbsp olive oil

  • ¾ cup vegetable broth or water

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • ½ tsp fennel seeds (classic sausage flavor)

  • ½ tsp black pepper

  • Optional: pinch of chili flakes or sage


👩‍🍳 Instructions

  1. Mash lentils until mostly smooth (a few chunks are okay).

  2. In a bowl, mix lentils, soy sauce, oil, and broth.

  3. Add all dry ingredients and mix until a dough forms.

  4. Knead gently 1–2 minutes (don’t overwork).

  5. Divide dough and shape into sausage logs.

  6. Wrap each sausage tightly in foil or parchment.

  7. Steam 35–40 minutes, then cool (they firm up more as they cool).


🔥 Cooking After Steaming

  • Pan-fry: Slice and cook in a little oil until golden

  • Grill: Brush lightly with oil

  • Air-fryer: 190°C / 375°F for 8–10 minutes
