Keto Hungarian Mushroom Soup

🧾 Ingredients (4 servings)

  • 2 tbsp butter or olive oil

  • 1 medium onion, finely chopped

  • 450 g (1 lb) mushrooms (button or cremini), sliced

  • 2 cloves garlic, minced

  • 2 tsp Hungarian paprika (sweet or half sweet / half smoked)

  • ½ tsp dried thyme

  • Salt & black pepper to taste

  • 2 cups chicken or vegetable broth (low-carb)

  • 1 cup heavy cream

  • ½ cup sour cream

  • 1 tbsp soy sauce or tamari (low-carb)

  • 1 tbsp lemon juice

  • 2 tbsp fresh parsley or dill, chopped


👩‍🍳 Instructions

  1. Sauté onions in butter over medium heat until soft (6–8 minutes).

  2. Add mushrooms and cook until they release moisture and begin to brown.

  3. Stir in garlic, paprika, thyme, salt, and pepper. Cook 30 seconds (don’t burn paprika).

  4. Add broth and soy sauce. Simmer 10–15 minutes.

  5. Lower heat. Stir in heavy cream and sour cream until smooth.

  6. Finish with lemon juice and fresh herbs. Adjust seasoning.


🍽️ Serving Ideas

  • With keto garlic bread or chaffles

  • Add grilled chicken or beef for extra protein

  • Top with extra sour cream & parsley

  • No flour — traditional soup thickened naturally by cream & mushrooms
