Instructions
1. Prepare the Filling
In a mixing bowl combine:

Shredded chicken

Chopped bacon
-
Cream cheese
-
Ranch dressing
-
Cheddar cheese
-
Garlic powder
-
Black pepper
Mix well until everything is evenly combined. Set aside.
2. Make the Keto Tortillas
Place mozzarella cheese and almond flour in a microwave-safe bowl.
Microwave for 45–60 seconds until the cheese melts.
Stir the mixture until it forms a soft dough.
3. Shape the Tortillas

Divide the dough into 8 small portions.

Place each portion between two sheets of parchment paper.

Roll into small thin circles (about tortilla size).
4. Add the Filling
Place 2–3 tablespoons of the chicken mixture across the center of each tortilla.
5. Roll the Taquitos
Carefully roll each tortilla tightly around the filling to form a taquito shape.
Place seam-side down on a parchment-lined baking tray.
6. Bake
Preheat oven to 200°C (400°F).
Bake for 12–15 minutes until:

7. Serve
Remove from the oven and let them cool for 2–3 minutes.
Serve warm with ranch dressing and optional toppings.
