Ingredients

Soup Base

  • 1 cup heavy cream

Flavor Ingredients

  • ½ cup grated parmesan cheese

Vegetables

  • 1 cup chopped spinach

Seasonings

  • 1 teaspoon Italian seasoning

  • ½ teaspoon red pepper flakes (optional)

  • ½ teaspoon black pepper

  • Salt to taste


Instructions

1. Cook Aromatics

Heat olive oil and butter in a large pot over medium heat.

Add diced onion and cook for 3–4 minutes until soft.

Add garlic and cook for 30 seconds until fragrant.


2. Add Sun-Dried Tomatoes

Stir in the chopped sun-dried tomatoes and cook for 2 minutes.
This step releases their rich flavor into the oil.


3. Add Broth and Chicken

Pour in the chicken broth and add shredded chicken.

Add:

  • Red pepper flakes

  • Black pepper

Bring to a gentle simmer and cook for 10 minutes.


4. Add Cream

Reduce heat to low and slowly stir in the heavy cream.

Let the soup simmer for 5 minutes so the flavors combine.


5. Add Cheese and Spinach

Stir in the parmesan cheese until melted.

Add the spinach and cook for 1–2 minutes until wilted.


6. Taste and Adjust

Taste the soup and adjust salt or spices if needed.


7. Serve

Ladle into bowls and optionally garnish with:

  • Fresh herbs like basil or parsley
