Keto Pizza Stuffed Mushrooms

Ingredients

Base

  • 12 large button mushrooms or cremini mushrooms

  • 1 tablespoon olive oil

Pizza Filling

  • ½ cup pizza sauce (choose low-carb)

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated parmesan cheese

Toppings

  • ¼ cup chopped pepperoni

  • ¼ cup diced bell peppers

  • 2 tablespoons chopped black olives

Seasonings

  • ½ teaspoon Italian seasoning

  • ½ teaspoon garlic powder

  • ¼ teaspoon **black pepper>

Optional Garnish

  • Fresh chopped basil


Instructions

1. Preheat the Oven

Preheat your oven to 200°C (400°F).
Line a baking sheet with parchment paper.


2. Prepare the Mushrooms

  1. Clean the mushrooms with a damp paper towel.

  2. Remove the stems carefully to create space for the filling.

  3. Lightly brush the mushroom caps with olive oil.


3. Prepare the Filling

In a bowl combine:

  • Pizza sauce

  • Half of the mozzarella cheese

  • Parmesan cheese

  • Italian seasoning

  • Garlic powder

  • Black pepper

Mix until well combined.


4. Stuff the Mushrooms

Place the mushroom caps on the baking sheet.

Fill each mushroom with 1–2 tablespoons of the pizza mixture.

Top with:

  • Remaining mozzarella cheese

  • Pepperoni

  • Bell peppers

  • Black olives


5. Bake

Bake for 18–20 minutes until:

  • The mushrooms are tender

  • The cheese is melted and slightly golden


6. Serve

Remove from the oven and let cool for 2–3 minutes.

Garnish with fresh basil and serve warm.


Tips for Best Results

  • Choose large mushrooms so they hold more filling.

  • Pre-bake the mushroom caps for 5 minutes if you want them less juicy.

  • Use low-carb pizza sauce to keep the recipe keto.
