Ingredients

Chicken

  • 2 large boneless skinless chicken breasts

  • ½ tsp salt

  • ½ tsp black pepper

Breading (Low-Carb)

  • ¾ cup almond flour

  • ½ cup grated parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • ½ tsp paprika

Egg Coating

  • 2 large eggs

  • 1 tbsp heavy cream (optional)

Cooking

  • 3 tbsp olive oil or avocado oil

Sauce

  • 1 cup low-carb marinara sauce

  • 1 tsp olive oil

  • ½ tsp garlic powder

  • ½ tsp dried basil

Cheese Topping

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated parmesan cheese


Step 1: Prepare the Chicken

  1. Slice each chicken breast horizontally to create thinner cutlets.

  2. Lightly pound the chicken with a meat mallet until about ½ inch thick.

  3. Season both sides with salt and pepper.

Thin chicken cooks faster and becomes crispier.


Step 2: Prepare the Breading

In a shallow bowl mix:

  • almond flour

  • parmesan cheese

  • garlic powder

  • Italian seasoning

  • paprika

Stir until evenly combined.


Step 3: Prepare Egg Mixture

In another bowl whisk:

  • eggs

  • heavy cream (optional)

This helps the breading stick to the chicken.


Step 4: Bread the Chicken

  1. Dip chicken into the egg mixture.

  2. Then coat it in the almond flour mixture.

  3. Press the coating firmly onto the chicken.

Place coated chicken on a plate.


Step 5: Pan Fry

Heat olive oil in a large skillet over medium heat.

Cook chicken:

  • 4–5 minutes per side

  • until golden brown and crispy.

Do not overcrowd the pan.


Step 6: Prepare the Sauce

In a small saucepan combine:

  • marinara sauce

  • olive oil

  • garlic powder

  • basil

Simmer 5 minutes.


Step 7: Assemble

Preheat oven to 200°C (400°F).

  1. Place the fried chicken in a baking dish.

  2. Spoon 2–3 tablespoons sauce over each piece.

  3. Sprinkle with mozzarella and parmesan cheese.


Step 8: Bake

Bake for 10–12 minutes until:

  • cheese melts

  • sauce bubbles

  • chicken is fully cooked (internal temp about 75°C / 165°F).

Optional: Broil 2 minutes for extra golden cheese.


Step 9: Garnish and Serve

Top with:

  • fresh basil

  • parsley

  • extra parmesan

  • cauliflower mash
