Ingredients

For the Cabbage

  • 1 large green cabbage

  • 1 tbsp salt (for boiling water)

Filling

  • 250 g raw shrimp (peeled and chopped)

  • 200 g smoked sausage (keto-friendly), diced

  • 2 tbsp olive oil or butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • ½ cup cauliflower rice

  • ¼ cup cream cheese

  • ¼ cup grated parmesan cheese

  • 1 tbsp tomato paste

Cajun Seasoning

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp dried oregano

  • ½ tsp dried thyme

  • ¼ tsp cayenne pepper (optional)

  • ½ tsp salt

  • ½ tsp black pepper

Sauce

  • 1 cup crushed tomatoes

  • ½ cup chicken broth

  • ½ tsp Cajun seasoning

  • 1 tbsp olive oil


Step 1: Prepare the Cabbage Leaves

  1. Bring a large pot of salted water to a boil.

  2. Remove the core from the cabbage.

  3. Place the whole cabbage in boiling water.

  4. Boil for 3–5 minutes until outer leaves soften.

  5. Carefully peel off 8–10 large leaves.

  6. Set aside to cool.

Trim the thick stem on each leaf so they roll easily.


Step 2: Cook the Filling

  1. Heat olive oil in a large pan over medium heat.

  2. Add diced sausage and cook 3–4 minutes until lightly browned.

  3. Add chopped onion and cook 3 minutes.

  4. Add garlic and cook 30 seconds.


Step 3: Add Remaining Filling Ingredients

Add to the pan:

  • cauliflower rice

  • chopped shrimp

  • tomato paste

  • Cajun seasoning mix

Cook 3–4 minutes until shrimp turn pink.

Then mix in:

  • cream cheese

  • parmesan cheese

Cook until creamy and well combined.

Remove from heat.


Step 4: Prepare the Sauce

In a bowl combine:

  • crushed tomatoes

  • chicken broth

  • olive oil

  • Cajun seasoning

Mix well.

Spread ½ cup sauce on the bottom of a baking dish.


Step 5: Stuff the Cabbage Rolls

  1. Lay a cabbage leaf flat.

  2. Place 2–3 tablespoons filling in the center.

  3. Fold sides inward.

  4. Roll tightly like a burrito.

Repeat with remaining leaves and filling.

Place rolls seam-side down in the baking dish.


Step 6: Add Sauce

Pour remaining sauce over the cabbage rolls.

Cover loosely with foil.


Step 7: Bake

Preheat oven to 180°C (350°F).

Bake 30–35 minutes until heated through and flavors combine.


Step 8: Garnish and Serve

Top with:

  • chopped parsley

  • sliced green onions

  • extra parmesan cheese

Serve hot.


Optional Additions

Extra Cajun flavor:

  • diced bell peppers

  • celery (classic Cajun “holy trinity”)

Extra richness:

  • drizzle with garlic butter

Spicy version:

  • add extra cayenne or hot sauce
