🌀 Keto Cinnamon Rolls (Soft & Fluffy)

1½ cups mozzarella cheese (shredded)

2 tbsp cream cheese

1 cup almond flour

1 tbsp coconut flour

1 large egg
-
1 tsp baking powder
-
2 tbsp keto sweetener (erythritol/allulose blend works best)

½ tsp vanilla extract
Cinnamon Filling

2 tbsp butter (softened)
-
2 tbsp brown keto sweetener
-
1½ tsp cinnamon
Cream Cheese Glaze

2 tbsp cream cheese (softened)
-
1 tbsp butter (softened)
-
2 tbsp powdered keto sweetener
-
½ tsp vanilla
-
1–2 tbsp heavy cream (for thinning)
Instructions

Preheat oven to 180°C (350°F).

Melt mozzarella + cream cheese in the microwave until smooth.

Stir in egg, almond flour, coconut flour, baking powder, sweetener, and vanilla to form a dough.

Roll dough between parchment paper into a rectangle.
-
Mix filling ingredients and spread evenly over dough.
-
Roll tightly into a log and slice into rolls.

Place in a greased baking dish and bake 15–18 minutes until lightly golden.

Mix glaze ingredients and drizzle over warm rolls 🤍
