Keto Cinnamon Roll

🌀 Keto Cinnamon Rolls (Soft & Fluffy)

Ingredients

Dough

  • 1½ cups mozzarella cheese (shredded)

  • 2 tbsp cream cheese

  • 1 cup almond flour

  • 1 tbsp coconut flour

  • 1 large egg

  • 1 tsp baking powder

  • 2 tbsp keto sweetener (erythritol/allulose blend works best)

  • ½ tsp vanilla extract

Cinnamon Filling

  • 2 tbsp butter (softened)

  • 2 tbsp brown keto sweetener

  • 1½ tsp cinnamon

Cream Cheese Glaze

  • 2 tbsp cream cheese (softened)

  • 1 tbsp butter (softened)

  • 2 tbsp powdered keto sweetener

  • ½ tsp vanilla

  • 1–2 tbsp heavy cream (for thinning)


Instructions

  1. Preheat oven to 180°C (350°F).

  2. Melt mozzarella + cream cheese in the microwave until smooth.

  3. Stir in egg, almond flour, coconut flour, baking powder, sweetener, and vanilla to form a dough.

  4. Roll dough between parchment paper into a rectangle.

  5. Mix filling ingredients and spread evenly over dough.

  6. Roll tightly into a log and slice into rolls.

  7. Place in a greased baking dish and bake 15–18 minutes until lightly golden.

  8. Mix glaze ingredients and drizzle over warm rolls 🤍
